The Smell of Coffee is in the air

The sounds of the beans tumbling around in the drum are the first signs that somethings afoot. All of the sudden the sounds like popcorn can be heard emanating from the roaster. First Crack as is is called is the early stages of a completed roast, not much longer now. The smells begin to get intense as the beans start to darken and the temperature starts to reach the 400 degree mark. Another popping signals the second crack and it is time for the beans to be dumped and cooled. The sweeper is turned on and the cooling fans begin to run. The smell of the freshly roasted coffee invigorates the senses. This is the start of the magical brew's life cycle.
